Glutathione (glutathione GSH) is an amino acid complex that exists in nature. It is an oligopeptide composed of three amino acids such as glutamic acid, cysteine and glycine. Glutathione exists in two forms in the body, namely reduced glutathione and oxidized glutathione (oxidized glutathione, referred to as GSSG). The glutathione that people usually refer to is reduced glutathione. Reduced glutathione is easily oxidized. The dimer obtained by oxidative dehydrogenation of the active sulfhydryl groups of two molecules of glutathione is connected by disulfide bonds, that is, oxidized glutathione. Among them, only reduced glutathione has physiological activity, while oxidized glutathione in the organism needs to be reduced before it can perform physiological functions.

Application
Glutathione is the most abundant small molecule thiol compound in the cell. Its molecule contains a specific γ-peptide bond, which is formed by the condensation of the γ-carboxyl group of glutamic acid and the α-amino group of cysteine. And there is an active sulfhydryl group attached to the side chain group of cysteine, which is the structural basis of many important physiological functions of glutathione.
The structure of reduced glutathione contains an active sulfhydryl group—SH, which is easily oxidatively dehydrogenated. In the body, it can protect the sulfhydryl groups in many proteins and enzymes from being oxidized by harmful substances such as free radicals, allowing proteins and enzymes to perform their physiological functions. At the same time scavenge free radicals. Many free radicals produced by the body's metabolism can damage cell membranes, destroy the immune system, invade life macromolecules, promote body aging, and induce tumors or atherosclerosis. As a result, glutathione has the effects of anti-aging and strengthening the immune system.
Functions
1. Glutathione prevention effect
Exogenous GSH supplement can prevent related diseases, maintain a healthy body.
2.Anti-oxidize effect
As an important antioxidant in the body, Insen glutathione can remove free radicals in the body.
3.Food additives
A. Insen glutathione not only shortens the time for making bread, but also strengthening food nutrition.
B. Add it to yogurt and baby food, equivalent to vitamin C, which can act as a stabilizer.
C. Mix it into the fish cake to prevent the color from deepening.
D. Adding to meat products and cheese and other foods has the effect of enhancing flavor.
1 (GSH) is a tripeptide that contains an unusual peptide linkage between the amine group of cysteine and the carboxyl group of the glutamate side-chain. It is an antioxidant, preventing damage to important cellular components caused by reactive oxygen species such as free radicals and peroxides
2 Thiol groups are reducing agents, existing at a concentration of approximately 5 mM in animal cells. Glutathione reduces disulfide bondsformed within cytoplasmic proteins to cysteines by serving as an electron donor. In the process, glutathione is converted to its oxidized form glutathione disulfide (GSSG)
3 Glutathione is found almost exclusively in its reduced form, since the enzyme that reverts it from its oxidized form, glutathione reductase, is constitutively active and inducible upon oxidative stress. In fact, the ratio of reduced glutathione to oxidized glutathione within cells is often used as a measure of cellular toxicity.
